This is one of my favorite pie recipes, especially for this time of year.....it's easy to make and you won't be sorry as it's delicious.
Walnut Crunch Pumpkin Pie
INGREDIENTS:
1 (9 inch) Graham cracker pie crust or unbaked pie shell 1 (15 ounce) can pumpkin 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk) 2 eggs 1 teaspoon ground cinnamon, divided in half 1 teaspoon maple flavoring (optional) 1/4 teaspoon ginger 1/4 teaspoon nutmeg 1/2 teaspoon salt 1/3 cup firmly packed brown sugar 1/3 cup all-purpose flour 3 tablespoons butter 1/2 cup chopped walnuts
DIRECTIONS: 1. Preheat oven to 425 degrees F. In large mixing bowl, combine pumpkin, EAGLE BRAND®, eggs, 1/2 teaspoon cinnamon, maple flavoring, ginger, nutmeg and salt; mix well. Pour into pie shell. Bake at 425 degrees for 15 minutes. Reduce oven to 350 degrees; continue baking 30 minutes. 2. Meanwhile, in medium mixing bowl, combine sugar, flour and remaining 1/2 teaspoon cinnamon; cut in butter until crumbly. Stir in nuts. 3. Remove pie from oven; top evenly with crumb mixture. Return to oven 10 minutes. Cool. Garnish as desired. Refrigerate leftovers.

Patti, That sounds soooooo good!!!, I think I'm going to try it tonite. Waiting for the NASCAR race to end 1st!!!! Hehehe....ok, I'll let ya know how I did....Thanks Again!!!!

Ok, I got one! It sounds really awful but its very healthy and tastes great. Take a quart of cottage cheese and a couple heaping tablespoonfuls of cocoa powder and mix together. Add enough unsweetened westsoy unsweetened chocolate soymilk or almond milk so its slushy. Whip it up in the blender a little at a a time and keep adding the soy or almond milk till its the consistancy of a thick shake. Sweeten with whatever you desire. I use stevia. Refidgerate and then add copped walnuts and unsweetened coconut flakes for topping when your ready to eat. It tastes kinda like a mouse.Ok, you gotta be a healthnut to enjoy this probably ;)and it maynot be that great for thanksgiving but give it a try!! :-*Frisky cat
